3-31-10 Æbleskivers

Æbleskiver (Danish meaning apple slices (singular:æbleskive)) are traditional Danish pancakes in a distinctive shape of a sphere. Somewhat similar in texture to American pancakes crossed with a popover, Æbleskiver are solid like a pancake but light and fluffy like a popover. The English language spelling is usuallyaebleskiver or ebleskiver. (wikipedia)
I haven't made them in a very long time. Mine did not come out as the perfect little round balls. I guess the city of Solvang doesn't need to worry about me butting in on their business! haha

3 years ago (3-27-07), Madeline Grace Meng Chan Phillips joined our family. What a blessing she is to the entire family! This year we went to Panda Express to celebrate.
